Mindful eating is not a diet. It is a practice of bringing full attention to the experience of eating — the colours, textures, aromas, flavours, and sensations of each bite. When we eat mindfully, we naturally eat less, enjoy food more, and make healthier choices without effort.

Begin by eliminating distractions at mealtimes. No phone, no television, no reading. Just food, and you. This alone transforms the experience significantly.

Chew each bite thoroughly — aim for 20-30 chews per mouthful. This is not obsessive; it is the first stage of healthy digestion. When you chew well, you produce more salivary amylase, begin breaking down starches, and send satiety signals to the brain before you have overeaten.

The sattvic diet — the traditional yogic approach to eating — emphasises fresh, seasonal, local, and plant-based foods prepared with care. At Samsaara, every meal is sattvic: prepared with intention, eaten in gratitude, and savoured with presence.
